Lifestyle - Food in Korea

Korea was once primarily an agricultural nation, and Korea have cultivated rice as their staple food since ancient times.

These days Korean cuisine is characterized by a wide variety of meat and fish dishes along with wild greens and vegetables. Various fermented and preserved food, such as kimchi (fermented spicy cabbage), jeotgal (matured seafood with salt) and doenjang (fermented soy bean paste) are notable for their specific flavor and high nutritional value.

The prominent feature of a Korean table setting is that all dishes are served at the same time. Traditionally, the number of side dishes varied from 3 for the lower classes to 12 for royal family members. Table arrangements can vary depending on whether a noodle dish or meat is served. Formal rules have developed for table setting, demonstrating the attention people pay to food and dining. Compared to neighboring China and Japan, a spoon is used more often in Korea, especially when soups are served.

Kinds of Traditional Korean Food
1. Bap (steamed rice) and Juk (porridge)
Boiled rice is the staple of Korean cuisine. Most people use sticky rice, which sometimes has beans, chestnuts, sorghum, red beans, barley or other cereals added for flavor and nutrition. Juk is thought of as highly nutritious and light. Many varieties of juk exist, for example, juk made of rice, red beans, pumpkin, abalone, ginseng, pine nuts, vegetables, chicken, mushrooms and bean sprouts.

2. Guk (soup)
Soup is an essential dish when rice is served. Ingredients of different soups include vegetables, meat, fish, shellfish, seaweed, and beef bones.

3. Jjigae (stew)
Jjigae is similar to guk but is thicker and hardier. The most famous jjigae is made from fermented soy bean paste. Jjigae is usually spicy and served piping hot in a heated stone bowl.

4. Dubu Jeongol (casserole)
Jeongol is often eaten in the evening. It is cooked in a steaming pot and contains noodles, mushrooms, small octopuses, cow intestines, vegetables, and other ingredients. The dubu (tofu) is sliced, coated with starch and pan-fried. Seasoned ground beef is then stuffed inside the dubu and it is tied with watercress. In a casserole pan, vegetables and dubu are arranged and boiled with soy sauce flavored broth.

5. Jjim and Jorim (simmered meat or fish)
Jjim and jorim are similar dishes which are prepared with vegetables and soaked in soy bean sauce, then slowly boiled together over a low flame.

6. Namul (vegetables or wild greens)
Namul is made from slightly boiled or fried vegetables and wild greens mixed with salt, soy sauce, sesame salt, sesame oil, garlic, onions, and other spices.

7. Jeotgal (matured salted seafood)
Jeotgal is a very salty food made of naturally fermented fish, shellfish, shrimp, oysters, fish roe, intestines and other ingredients.

8. Gui (broiled/barbecued dishes)
When cooking gui, marinated meats are barbecued over a charcoal fire. The most popular meats of this type are bulgogi and galbi. There are also many fish dishes which are cooked this way.

9. Jeon (pan-fried dishes)
Jeon is a kind of pancake made from mushrooms, pumpkin, slices of dried fish, oysters, unripe red peppers, meat or other ingredients which are mixed with salt and black pepper, dipped in flour and egg and fried in oil.

10. Mandu (dumpling)
Mandu is dumplings stuffed with beef, mushrooms, stir-fried zucchini, and mungbean sprouts. Pork, chicken, or fish is sometimes used instead of beef.

History

The Prehistoric Age
Archaeological findings have indicated that the first settlements on the Korean Peninsula occurred 700,000 years ago

Go-Joseon (2333 - 108 B.C)
According to legend, the mythical figure Dan-gun founded Go-Joseon, the first Korean Kingdom, in 2333 B.C. Subsequently, several tribes moved from the southern part of Manchuria to the Korean Peninsula.

The Three Kingdoms Period (57 B.C. - A.D. 676)
The three kingdoms, Goguryeo, Baekje and Silla, were established in the 1st century A.D. During this period, the kingdom’s political systems, religions (Buddhism and Confucianism), and cultures developed.

The Unified Silla Kingdom (676 - 935)
The Unified Silla Kingdom promoted the development of culture and arts, and the popularity of Buddhism reached its peak during this period. The Unified Silla Kingdom declined because of contention for supremacy among the noble classes, and was annexed by Goryeo in 935.

The Goryeo Dynasty (918 - 1392)
The Goryeo Dynasty was established in 918. Buddhism became the state religion during this time and greatly influenced politics and culture. Famous items produced during this time include Goryeo celadon and the Tripitaka Koreana. During the Goryeo Dynasty, Jikji, the world’s oldest movable metal type was published. It was invented 78 years before the German movable metal type created by Gutenburg. The Goryeo Dynasty’s strength decreased gradually in the latter half of the 14th century.

The Joseon Dynasty (1392 - 1910)
The Joseon Dynasty was formed at the end of the 14th century. Confucianism became the state ideology and exerted a massive influence over the whole of society. The Joseon Dynasty produced Hangeul, the Korean alphabet, which was invented in 1443, during the reign of King Sejong. The dynasty’s power declined sharply later because of foreign invasions, beginning with the Japanese invasion of 1592.

The Japanese Colonial Period (1910 - 1945)
In 1876, the Joseon Dynasty was forced to adopt an open-door policy regarding Japan. The Japanese annexation of Korea concluded in 1910, and Korean people had to accept Japanese colonial rule until the surrender of Japan, which ended World War II.

The Republic of Korea (1945 - Present)
In 1945, Japan surrendered to the Allies and withdrew from the Korean Peninsula. The Korean Peninsula was then divided into two zones, South and North Korea.



The Korean War broke out on June 25, 1950 and fighting ended when an armistice was signed on July 27, 1953. In 2000, an historic summit took place between South and North Korea in Pyeongyang, the capital of North Korea.

Thailand is a Southeast Asian, predominantly Buddhist kingdom almost equidistant between India and China. For centuries known by outsiders as Siam, Thailand has been something of a Southeast Asian migratory, cultural and religious cross-roads.

Thailand shares borders with Myanmar to the west and north, Laos to the north-east, Kampuchea to the west, and Malaysia to the south. Geographically speaking, Thailand is divided into six major regions: the mountainous north where elephants work forests and winter temperatures are sufficiently cool to permit cultivation of temperate fruits such as strawberries and peaches; the sprawling north-east plateau, largely bordered by the Mekong River, where the world’s oldest Bronze Age civilisation flourished some 5,000 years ago; the central plain, one of the world’s most fertile rice and fruit-growing areas; the eastern coastal plain, where fine sandy beaches support the growth of summer resorts; western mountains and valleys, suitable for the development of hydro-electric power: and the peninsular south where arresting scenic beauty complements economically vital tin mining, robber cultivation and fishing.

Thailand enjoys a tropical climate with 3 distinct seasons – summer from March through May, rainy with plenty of sunshine from June to September and cool from October through February. The average annual temperature is 28°C (83°F), ranging, in Bangkok, for example, from 30°C in April to 25°C in December.
 
 Time
 
Time in Thailand is 7 hours ahead of Greenwich Mean Time (GMT+ 7).
 History
 
Archaeological discoveries around the north- east hamlet of Ban Chiang suggest that the world’s oldest Bronze Age civilisation was flourishing in Thailand some 5,600 years ago. Successive waves of immigrants, including Mons, Khmers and Thais, gradually entered the land mass now known as Thailand, most slowly travelling along fertile river valleys from southern China. By the 11th and 12th centuries, Khmers ruled much of the area from Angkor. By the early 1200s, Thais had established small northern city states in Lanna, Phayao and Sukhothai. In 1238, two Thai chieftains rebelled against Khmer suzerainty and established the first truly independent Thai kingdom in Sukhothai (literally, ‘Dawn of Happiness’). Sukhothai saw the Thais’ gradual expansion throughout the entire Chao Phraya River basin, the establishment of Theravada Buddhism as the paramount Thai religion, the creation of the Thai alphabet and the first expression of nascent Thai art forms, including painting, sculpture, architecture and literature. Sukhothai declined during the 1300s and eventually became a vassal state of Ayutthaya, a dynamic young kingdom further south in the Chao Phraya River valley. Founded in 1350, Ayutthaya remained the Thai capital until 1767 when it was destroyed by Burmese invaders. During Ayutthaya’s 417 years as the capital, under the rule of 33 kings, the Thais brought their distinctive culture to full fruition, totally rid their lands of Khmer presence and fostered contact with Arabian, Indian, Chinese, Japanese and European powers. Ayutthaya’s destruction was as severe a blow to the Thais as the loss of Paris or London would have been to the French or English. However, a Thai revival occurred within a few months and the Burmese were expelled by King Taksin who later made Thon Buri his capital. In 1782, the first king of the present Chakri dynasty, Rama I, established his new capital on the site of a riverside hamlet called Bangkok (Village of Wild Plums). Two Chakri monarchs, Mongkut (Rama IV) who reigned between 1851 and 1868, and his son Chulalongkorn (Rama V, 1868-1910) saved Thailand from western colonisation through adroit diplomacy and selective modernisation. Today, Thailand is a constitutional monarchy. Since 1932, Thai kings including the present monarch, H.M. King Bhumipol Adulyadej have exercised their legislative powers through a national assembly, their executive powers through a cabinet headed by a prime minister, and their judicial powers through the law courts.
 
 People
 
Throughout her long history, Thailand has gently absorbed immigrants. Many were skilled as writers, painters, sculptors, dancers, musicians and architects, and helped enrich indigenous culture. People inhabiting Thailand today share rich ethnic diversity mainly Thai, Mon, Khmer, Laotian, Chinese, Malay, Persian and Indian stock with the result that there is no typically Thai physiognomy or physique. There are petite Thais, statuesque Thais, round faced Thais, dark-skinned Thais and light-skinned Thais. Some 80% of all Thais are connected in some way with agriculture which, in varying degrees, influences and is influenced by the religious ceremonies and festivals that help make Thailand such a distinctive country.
 
 Religion
 
Theravada Buddhism is the professed religion of more than 90% of all Thais, and casts strong influences on daily life. Buddhism first appeared in Thailand during the 3rd Century B.C. at Nakhon Pathom, site of the world’s tallest Buddhist monument, after the Indian Buddhist Emperor Asoka (267-227 B.C.) despatched missionaries to Southeast Asia to propagate the newly established faith. Besides moulding morality, providing social cohesion and offering spiritual succour, Buddhism provided incomparable artistic impetus. In common with medieval European cathedrals, Thailand’s innumerable multiroofed temples inspired major artistic creation. Another reason for Buddhism’s strength is that there are few Thai Buddhist families in which at least one male member has not studied the Buddha’s teachings in a monastery. It has long been a custom for Buddhist males over twenty, once in their lifetimes, to be ordained for a period ranging from s days to a months. This usually occurs daring the annual Rains Retreat, a a-month period during the Rains Season when all monks forego travel and stay inside their monasteries. Besides sustaining monastic communities, Thai temples have traditionally served other purposes as the village hostelry, village news, employment and information agency, a school, hospital, dispensary and community centre to give them vital roles in Thai society. The Thais have always subscribed to the ideal of religious freedom. Thus sizeable minorities of Muslims, Christians, Hindus and Sikhs freely pursue their respective faiths.
 
 
 Language
 
Spoken and written Thai remain largely incomprehensible to the casual visitor. However, English is widely understood, particularly in Bangkok where it is almost the major commercial language. English and other European languages are spoken in most hotels, shops and restaurants, in major tourist destinations, and Thai-English road and street signs are found nation-wide.
